Ingredients
- •4 large eggs, separated
- •350 g Greek protein yogurt, 0–2%
- •2 tbsp rice flour
- •1 heaping tbsp cornstarch
- •2 tbsp Allulose, Monk Fruit, Stevia, or sweetener of choice
- •½ tsp vanilla extract
- •Pinch of citric acid
Instructions
- 1Preheat the oven to 140°C / 285°F. Line a loaf pan with parchment paper.
- 2Separate the eggs. In a bowl, whisk the egg yolks with the Greek protein yogurt, rice flour, cornstarch, sweetener and vanilla until completely smooth.
- 3In a clean bowl, whip the egg whites with a pinch of citric acid until firm, glossy peaks form.
- 4Gently fold the whipped egg whites into the yogurt mixture in 2–3 additions, taking care not to deflate the mixture.
- 5Transfer the batter to the parchment-lined loaf pan and gently smooth the top.
- 6Bake at 140°C / 285°F for approximately 60 minutes, until the cake is tall, lightly golden and set.
- 7Turn off the oven and leave the cake inside for 15 minutes with the oven door slightly open.
- 8Remove and allow to cool completely, then refrigerate for at least 2 hours before slicing.
VITA Tips
- ✦For the tall, cloud-like texture, the key is whipping the egg whites properly and folding them into the batter very gently.
