Ingredients
- •400 g plain nonfat Greek yogurt, high in protein
- •3 large eggs
- •1 tbsp (15 g) cornstarch
- •1 tbsp (15 g) sugar-free instant vanilla pudding mix
- •Optional: 1–2 tbsp allulose or monk fruit sweetener, to taste
Instructions
- 1Preheat the oven to 350°F (180°C). Line an 8×4-inch loaf pan with parchment paper.
- 2In a mixing bowl, whisk the eggs until smooth. Add the Greek yogurt and mix until creamy.
- 3Add the cornstarch and vanilla pudding mix. Add sweetener if desired. Whisk until completely smooth.
- 4Transfer the batter to the prepared loaf pan and gently smooth the surface.
- 5Bake at 350°F (180°C) for 10 minutes, then reduce to 285°F (140°C) and bake for another 35–40 minutes, until the edges are set and the center has a slight jiggle.
- 6Turn off the oven and leave the cheesecake inside for 15 minutes with the door slightly open.
- 7Cool completely, then refrigerate for at least 4 hours, preferably overnight. Serve chilled.
VITA Tips
- ✦For the creamiest texture, use thick Greek yogurt and avoid overbaking. The cheesecake will continue to set as it cools.
