Ingredients
- •1 medium orange, washed (seeds removed)
- •3 eggs
- •200 g high-protein Greek yogurt
- •⅔ cup sweetener of choice (Monk Fruit or Stevia)
- •¼ cup avocado oil
- •1 scoop (30 g) vanilla protein powder
- •1 cup almond flour
- •½ cup oat flour
- •2 tsp baking powder
- •Pinch of salt
- •Orange Yogurt Glaze: 100 g Greek yogurt, 1 tbsp orange juice, 1—2 tbsp sweetener, zest of 1 orange
Instructions
- 1Preheat the oven to 170ֲ°C (340ֲ°F) and line a 20 cm cake pan with parchment paper.
- 2Cut the orange into chunks, remove seeds, and blend until smooth.
- 3Add eggs, Greek yogurt, sweetener, oil, and protein powder. Blend until combined.
- 4Add almond flour, oat flour, baking powder, and salt. Mix just until incorporated.
- 5Pour into the prepared pan and bake for 30—35 minutes until a toothpick comes out clean.
- 6Cool completely, then mix glaze ingredients and spread over the cake.
- 7Garnish with fresh orange zest before serving.
