Ingredients
- •200 g fresh strawberries, sliced
- •150 g fresh raspberries
- •150 g fresh blueberries
- •2 tbsp (18–20 g) unflavored gelatin powder
- •120 ml cold water, for blooming the gelatin
- •480 ml hot water
- •2–3 tbsp freeze-dried strawberry powder
- •1–2 tbsp fresh lemon juice
- •Allulose, Monk Fruit, Stevia, or sweetener of choice, to taste
Instructions
- 1Arrange the strawberries, raspberries, and blueberries evenly in a 25 cm (10-inch) Bundt or silicone ring mold.
- 2Sprinkle the gelatin over the cold water. Let stand for 5–10 minutes to bloom.
- 3Add the hot water and stir until the gelatin is completely dissolved. Add the strawberry powder, lemon juice, and sweetener. Mix well.
- 4Allow the jelly mixture to cool to room temperature before pouring it slowly over the berries until the fruit is covered.
- 5Refrigerate for 4–6 hours, preferably overnight, until completely firm.
- 6To unmold, briefly dip the outside of the mold in warm water for 5–10 seconds. Place a serving plate on top and carefully invert.
VITA Tips
- ✦For a beautiful clear jelly, use finely sifted freeze-dried strawberry powder — or leave it out and use a few drops of natural strawberry flavour. Too much fruit powder will make the jelly cloudy.
- ✦Make sure the jelly has cooled to room temperature before pouring — hot liquid can crush the berries.
- ✦Keeps covered in the fridge for up to 3 days.
