Ingredients
- •Orange Batter: 150g 0% Greek yogurt
- •2 large eggs
- •100g egg whites
- •100ml fresh orange juice
- •Zest of 2 oranges
- •1 tsp vanilla extract
- •60g Allulose or granulated Monk Fruit sweetener
- •80g oat flour
- •50g vanilla whey protein powder, sugar-free
- •20g almond flour
- •2 tsp baking powder
- •¼ tsp baking soda
- •Pinch of salt
- •Chocolate Batter: ⅓ of the prepared orange batter
- •15g unsweetened cocoa powder
- •20ml unsweetened soy milk
Instructions
- 1Preheat oven to 175°C / 350°F. Line a 20 × 10 cm loaf pan with parchment paper.
- 2Whisk yogurt, eggs, egg whites, orange juice, zest, vanilla, and sweetener until smooth.
- 3Add oat flour, protein powder, almond flour, baking powder, baking soda, and salt. Mix just until combined.
- 4Transfer ⅓ of the batter to another bowl. Mix in cocoa and soy milk until smooth.
- 5Spoon the orange and chocolate batters alternately into the pan in large sections. Do not over-swirl — this keeps the bold marble pattern.
- 6Bake for 40–45 minutes, or until a toothpick inserted into the orange portion comes out with only a few moist crumbs.
- 7Cool in the pan for 15 minutes, then transfer to a rack and cool before slicing.
VITA Tips
- ✦For the strongest orange flavor without extra calories, use the finely grated zest of 2 full oranges.
- ✦Do not over-swirl the batters — a few gentle passes give the boldest marble effect.
