Ingredients

  • 3 large eggs
  • 200 g plain high-protein Greek yogurt
  • ¼ cup avocado oil or melted coconut oil
  • ⅔ cup sweetener of choice
  • 1 tsp vanilla extract
  • 1 cup (100 g) almond flour
  • ½ cup (50 g) oat flour
  • 1 scoop (30 g) chocolate protein powder
  • ⅔ cup (35 g) unsweetened cocoa powder
  • 2 tsp baking powder
  • Pinch of salt
  • 180 g fresh or frozen pitted cherries
  • Ganache (optional): 80 g sugar-free dark chocolate, 60 ml almond milk, 1 tsp coconut oil

Instructions

  1. 1Preheat the oven to 170ֲ°C (340ֲ°F). Line a 20 cm round cake pan with parchment paper.
  2. 2Whisk eggs, yogurt, oil, sweetener, and vanilla until smooth.
  3. 3Add almond flour, oat flour, protein powder, cocoa, baking powder, and salt. Mix until fully combined.
  4. 4Gently fold in the cherries.
  5. 5Pour into the prepared pan, smooth the top, and bake for 40—45 minutes.
  6. 6Cool completely.
  7. 7For the ganache, melt chocolate with almond milk and coconut oil until smooth. Pour over the cooled cake.
  8. 8Decorate with fresh cherries and chocolate shavings before serving.
