Ingredients
- •3 large eggs
- •200 g plain high-protein Greek yogurt
- •¼ cup avocado oil or melted coconut oil
- •⅔ cup sweetener of choice
- •1 tsp vanilla extract
- •1 cup (100 g) almond flour
- •½ cup (50 g) oat flour
- •1 scoop (30 g) chocolate protein powder
- •⅔ cup (35 g) unsweetened cocoa powder
- •2 tsp baking powder
- •Pinch of salt
- •180 g fresh or frozen pitted cherries
- •Ganache (optional): 80 g sugar-free dark chocolate, 60 ml almond milk, 1 tsp coconut oil
Instructions
- 1Preheat the oven to 170ֲ°C (340ֲ°F). Line a 20 cm round cake pan with parchment paper.
- 2Whisk eggs, yogurt, oil, sweetener, and vanilla until smooth.
- 3Add almond flour, oat flour, protein powder, cocoa, baking powder, and salt. Mix until fully combined.
- 4Gently fold in the cherries.
- 5Pour into the prepared pan, smooth the top, and bake for 40—45 minutes.
- 6Cool completely.
- 7For the ganache, melt chocolate with almond milk and coconut oil until smooth. Pour over the cooled cake.
- 8Decorate with fresh cherries and chocolate shavings before serving.
