Ingredients
- •80 g almond flour
- •30 g oat flour
- •20 g natural almond butter
- •25 ml unsweetened soy milk
- •1 tbsp sweetener of choice (Allulose, Monk Fruit, or Stevia)
- •½ tsp vanilla extract
- •Pinch of salt
- •400 g light cream cheese, 5%
- •350 g thick Greek PRO yogurt, 0–2%
- •150 g cottage cheese, 1–2%, blended smooth
- •30 g vanilla whey protein isolate
- •50 g sweetener of choice (Allulose, Monk Fruit, or Stevia)
- •1 tsp vanilla extract
- •10 g powdered gelatin
- •50 ml cold water
- •250 g raspberries or mixed berries
- •25 g sweetener of choice (Allulose, Monk Fruit, or Stevia)
- •1 tbsp fresh lemon juice
- •1 tsp cornstarch
- •1 tbsp water
Instructions
- 1Crust: mix almond flour, oat flour, almond butter, soy milk, sweetener, vanilla, and salt until it comes together. Press firmly into the base of a 20 cm springform pan. Chill for 15 minutes.
- 2Berry sauce: cook berries, sweetener, and lemon juice in a saucepan for 5 minutes. Blend until smooth. Mix cornstarch with water, stir into the sauce, and simmer 1–2 minutes until slightly thickened. Cool completely.
- 3Gelatin: bloom powdered gelatin in 50 ml cold water for 5–10 minutes, then heat gently just until fully dissolved — do not boil.
- 4Filling: blend cream cheese and cottage cheese together until completely silky. Add Greek yogurt, protein powder, sweetener, and vanilla; mix until smooth. Slowly stir in the dissolved gelatin.
- 5Pour the filling over the chilled crust.
- 6Swirl: spoon one-third of the cooled berry sauce over the surface and gently swirl it through with a skewer or spoon.
- 7Cover and refrigerate for at least 6 hours, preferably overnight.
- 8Once fully set, spread the remaining berry sauce over the top. Keep refrigerated and serve cold.
VITA Tips
- ✦Blend the cottage cheese completely smooth before adding — any lumps will show in the final texture.
- ✦Do not boil the gelatin; overheating destroys its setting power.
- ✦Overnight chilling gives the best texture — the cheesecake slices cleanly and holds its shape.
